Hearty Cabbage Soup


Hearty Cabbage Soup

2 Tbsp extra virgin olive oil
1 onion chopped
2 carrots chopped
2 to 3 stocks celery chopped
1/2 tsp. Chili powder
Salt and pepper
1 15 ounce can of white beans dried and rinsed
3 cloves garlic minced
1 tsp thyme
4 cups chicken broth
2 cups water
1/2 head cabbage chopped
Pinch of red pepper flakes
1 15 ounce can of chopped fire roasted tomatoes
2 Tbsp fresh parsley chopped

Heat olive oil on medium and add onion carrots celery chili powder salt and pepper. Stir 4-5 minutes until the vegetables have softened. Stir in beans, garlic , and thyme for 30 seconds. Add broth and water and bring to a simmer. Stir in the tomatoes, cabbage, and red pepper flakes and cook until cabbage is wilted. Serve with fresh parsley on top.
